Flourless chocolate cake
Best chocolate cake ever, from Sue Bell:
Melt together:
1/4 cup of unsalted butter
6 to 7 oz bittersweet chocolate
Grind together:
1 cup of nuts (hazelnuts, pecans, almonds) with
1 cup of sugar
Add:
1 teaspoon vanilla
6 eggs (I usually separate some and whip the whites, then fold them into the batter.)
You can make the whole batter in a cuisinart. First grinding nuts, adding sugar, then the choc mix, then vanilla and eggs.
Bake at 350 degrees for about 40 minutes in a paper-lined 9" or 10" pan or a buttered flan dish.
If you want to cover it with chocolate, melt 3 to 4 oz chocolate with a tablespoon of butter and pour it on while it is still warm.
